Over 13 weeks, the series will cover Moroccan, Malaysian, Portuguese, Vietnamese, Indian, Greek, Chinese, Italian, Thai, Lebanese, Mexican, Turkish and Spanish cuisines. Maeve meets some amazing and renowned chefs in this series including Guy Grossi (Grossi Florentino), Luke Nguyen (Red Lantern) and Jess Ong (Sofitel, Sydney), but Food Safari also provides the practical tools and tips for use in your own kitchen. As well as being a visually-entrancing series, it has that fusion of intimacy and practicality with well-known chefs taking Maeve through their favourite dishes in addition to little-known, talented home cooks divulging their secrets to authentic cuisine.Most of the ingredients used in Food Safari are in the local supermarket and top chefs and passionate home cooks show the viewer which ingredients to buy. It's like going shopping with a food-savvy friend, an expert in the cuisine of Italy, Morocco, Portugal or Vietnam. Then at home they demonstrate some really easy, authentic recipes: for example, in under 10 minutes you can whip up a cheat's laksa, coconut and cardamom burfi, Vietnamese noodle salad or a Moroccan dessert.This first episode journeys into the beguiling, delicately-spiced world of Moroccan food and meets a range of top chefs and home-cooks who are passionate about their delicious cuisine. Maeve O'Meara joins her friend restaurateur Omar Majdi who advises the best spices and ingredients needed for Moroccan food and makes a dressing for fruit salad using sugar syrup, orange blossom water, cinnamon and lemon juice - he predicts it will be the hit of summer. Home-cook Malika Ennaim shows how easy it is to make your own harissa and preserved lemons, and gives us some secret tips to make fabulous couscous. Chef Hassan M'Souli - the tajine king - explains why the conical terracotta cooking pot the "tajine" makes food taste exceptionally good and demonstrates with one of the most favoured dishes of Morocco: chicken with green olives and preserved lemons. Chef Aziz Bakhalla marinates lamb for the barbie with a handful of spices and whips up a dip using fava beans.
