Summary The National Egg Quality Assurance Program manual has been prepared as a template for commercial egg farms to use to establish the quality assurance program on their farms. The program is based on the HACCP (Hazard Analysis Critical Control Point) system. A HACCP team of egg industry representatives and technical experts with experience in the areas of food safety, biosecurity, welfare and the development and implementation of HACCP-based quality assurance programs was established to develop a HACCP Plan that would cover the range of circumstances expected to occur in commercial egg production in Australia.
