Summary |
Swiftlet nests are considered one of the most refined delicacies in Asian cuisine as they are the key ingredient for bird's nest soup. Mali Island belongs to the Burmese Army which runs the local swiftlet nests trade. In season, for about six months, 20 or so men set out to collect the valuable nests. But swiftlets make their nests very high up the many caves of the island, and nest collection is a dangerous albeit profitable occupation.
