Celebrity chef Heston Blumenthal continues to defy creative cooking with his series which explores the stories behind Britain's favourite dishes. Britain is home to some of the most iconic dishes in the world. From fish and chips to spotted dick, pie and mash to roast beef and Yorkshire pudding, these are the meals that have kept stomachs full and satisfied for centuries.In Heston's Great British Food, the boundary pushing chef goes looking for answers to: Why did roast beef become Britain's national dish? How were fish and chips used to keep moral up during the war? And what (or who) was the most unusual filling served up in a pie? On his travels around the country Heston discovers why these dishes are so deeply rooted in British culture. Unlocking their secret histories, he uses what he learns to help inspire an epic culinary salute to each one... but all with a Heston twist of course.In tonight's final episode, Heston gives the classic British afternoon tea a few very special twists, conjuring something the Mad Hatter himself would be proud of. Heston does his own take on the Victoria sandwich cake. Inspired by a visit to Wedgwood fine china manufacturers, he makes an edible cake stand out of sponge and adds some 'sandwich' cakes that look like smoked salmon and cream cheese, but are in fact sweet cakes made from Earl Grey sponge and blood orange pa\0x0302te\0x0301 de fruit. For tea, Heston brews a Darjeeling and hedgerow infusion and cucumber sandwich tea leaves. There's also a sandwich casino inside a beautiful country house in Staffordshire, where the guests are able to eat the playing cards, casino chips and even the gambling table.
